¼ teaspoon garlic powder, ¼ teaspoon paprika
4 small flour tortillas, 4 slices cheddar cheese, 1 cup finely shredded iceberg lettuce, 4 gherkin pickles, thinly sliced, ¼ small red onion, finely chopped, 1 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon garlic powder
For the Big Mac Sauce
4 tablespoons mayonnaise, 1 tablespoon ketchup, 1 tablespoon mustard, 2 tablespoons finely chopped gherkin pickles, 1 tablespoon finely chopped red onion, 1 dessert spoon pickle juice
¼ teaspoon garlic powder, ¼ teaspoon paprika
Method
1. Season the Ground Beef
Place the ground beef in a bowl. Add the salt, black pepper, and garlic powder. Mix briefly until the seasonings are evenly distributed. Avoid overmixing.
2. Divide the Ground Beef
Divide the seasoned ground beef into four equal portions. Gently shape each portion into a loose ball.
3. Spread the Beef onto the Tortillas
Place one portion of ground beef in the center of each tortilla. Using your fingertips, press and spread the beef into a thin, even layer, extending it all the way to the edges. Repeat with the remaining tortillas.
4. Prepare the Big Mac Sauce
Add the mayonnaise, ketchup, and mustard to a small bowl. Add the finely chopped gherkin pickles, red onion, pickle juice, garlic powder, and paprika. Mix until smooth and well combined.
5. Heat the Pan
Heat a large non-stick frying pan over medium-high heat. If you are using medium-fat ground beef, there is no need to add any oil.
6. Cook the Beef Side
Place a prepared tortilla in the hot pan with the beef side facing down. Press it firmly with a spatula and cook for 3–4 minutes, until the beef is browned and fully cooked.
7. Flip the Taco
Slide the spatula completely underneath the tortilla and flip it over in one swift motion. Cook the tortilla side for about 1 minute.
8. Melt the Cheese
Place a slice of cheddar cheese over the cooked beef. Cover the pan, reduce the heat to low, and cook for 1–2 minutes, until the cheese has completely melted.
9. Cook the Remaining Tacos
Transfer the cooked taco to a serving plate. Cook the remaining beef-topped tortillas in batches using the same method.
10. Add the Toppings
Top the melted cheese with finely shredded lettuce, sliced gherkin pickles, and a small amount of finely chopped red onion, if desired.
11. Add the Sauce
Drizzle the prepared Big Mac sauce over the toppings. Avoid adding too much, as excess sauce may cause the tortilla to soften quickly.
12. Fold and Serve
Fold the tortilla in half to form a taco. Serve immediately while the beef and cheese are still hot.
