Cheesy Spicy Sausage Potato Balls
Ingredients
For the Potato Mixture:
500 grams potatoes, 100 grams spicy sausage, 2 tablespoons cornstarch, 1 egg yolk, 1 teaspoon paprika, 1/2 teaspoon black pepper, 1/2 teaspoon salt
For the Filling:
120 grams mozzarella or cheddar cheese, cut into small cubes
For Coating:
1 large egg, 100 grams breadcrumbs
For Frying:
500–700 milliliters vegetable oil

Method
1. Boil the Potatoes
Peel the potatoes and cut them into medium-sized pieces. Add them to a pot of salted water and boil for approximately 15–20 minutes, until completely soft.
2. Drain the Potatoes
Drain the cooked potatoes thoroughly and allow them to rest for a few minutes so any excess moisture can evaporate.
3. Mash the Potatoes
Transfer the potatoes to a large bowl. Mash them until smooth and free from large pieces.
4. Prepare the Sausage
Cut the spicy sausage into very small cubes. Keep the pieces small so they distribute evenly throughout the potato mixture.
5. Add the Ingredients
Add the cornstarch, egg yolk, paprika, black pepper, salt, and diced spicy sausage to the mashed potatoes.
6. Mix the Potato Mixture
Mix everything thoroughly until the ingredients are evenly distributed and the potato mixture becomes soft but firm enough to shape by hand.
7. Prepare the Cheese
Cut the mozzarella or cheddar into small cubes. The cheese should be small enough to fit completely inside each potato ball.
8. Shape the Potato Balls
Take a portion of the potato mixture and roll it into a ball. Press your finger into the center to create a deep cavity.
9. Add the Cheese Filling
Place one or two cheese cubes into the center of the potato ball. Fold the potato mixture over the cheese and seal it completely.
10. Finish Shaping
Roll the filled potato mixture between your hands until it becomes a smooth, round ball. Repeat with the remaining mixture.
11. Prepare the Coating
Beat the egg in one bowl and place the breadcrumbs in a separate bowl.
12. Coat the Potato Balls
Dip each potato ball completely into the beaten egg, then roll it in the breadcrumbs until the entire surface is evenly coated.
13. Heat the Oil
Heat the vegetable oil in a deep pan over medium heat. The oil should be hot enough to fry the potato balls immediately without burning the breadcrumbs.
14. Fry the Potato Balls
Carefully place the coated potato balls into the hot oil. Fry in small batches for approximately 3–4 minutes, turning when necessary, until evenly golden brown and crispy.
15. Drain
Remove the potato balls from the oil and transfer them to a plate lined with paper towels to remove excess oil.
16. Serve
Serve the potato balls while hot. Break one open to reveal the soft potato interior and melted cheese center.
