Fluffy Soufflé Omelette

Ingredients

For the Soufflé Omelette:

3 large eggs, ¼ teaspoon salt, 1 teaspoon butter or neutral oil

Method

1. Separate the Eggs

Carefully separate the egg whites from the yolks. Place the yolks in one bowl and the whites in a separate, completely clean and dry bowl.

2. Whisk the Egg Yolks

Add half of the salt to the egg yolks. Whisk with a fork until smooth and evenly combined.

3. Begin Whipping the Egg Whites

Using an electric hand mixer, beat the egg whites on medium speed until they become pale and foamy.

4. Whip to Stiff Peaks

Add the remaining salt and continue beating on high speed until the egg whites form stiff, glossy peaks. The mixture should hold its shape when the beaters are lifted.

5. Prepare the Pan

Heat a small non-stick frying pan over low heat. Add the butter or oil and spread it evenly across the base.

6. Add the Egg Yolks

Pour the whisked yolks into the pan. Tilt the pan gently to create a thin, even layer. Cook for approximately 30–45 seconds, until the base begins to set.

7. Add the Whipped Egg Whites

Spoon the whipped egg whites onto the center of the yolk layer. Build the mixture upward to create a tall, rounded mound.

8. Shape the Soufflé

Using the back of a spoon or a spatula, gently smooth the surface without pressing out the air.

9. Cover the Pan

Cover the pan with a tight-fitting lid. Cook over the lowest possible heat for approximately 6–8 minutes.

10. Check for Doneness

The egg-white soufflé should appear set, tall, and springy when lightly touched. The bottom should be lightly golden without becoming too dark.

11. Remove from the Pan

Carefully loosen the edges with a silicone spatula. Gently slide the soufflé omelette onto a serving plate or invert it onto a wooden board.

12. Serve

Slice the soufflé omelette while still warm to reveal its airy interior. Serve immediately before it begins to deflate.
